Ingredients
- 1 package phyllo dough
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 eggs, beaten
- 2 tablespoons sesame seeds (optional)
Directions
- 1
Preheat your oven to 375°F (190°C).
- 2
Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté for 4-5 minutes until softened.
- 3
Add spinach and cook until wilted, about 3-4 minutes. Remove extra liquid and let cool slightly.
- 4
Stir in feta cheese, parsley, dill, salt, pepper, and one beaten egg until well combined.
- 5
Unroll phyllo dough and cover with a damp towel. Place one sheet on a flat surface and brush with some of the second beaten egg. Repeat layering with 5 more sheets.
- 6
Spread spinach mixture evenly, leaving a 1-inch border. Roll tightly, tucking in the ends, and brush top with remaining egg. Sprinkle with sesame seeds if using.
- 7
Place on a baking sheet and bake for 25-30 minutes until golden brown.
- 8
Allow to cool slightly before slicing and serving.
Chef's tip
Allow the filling to cool before wrapping in phyllo to prevent sogginess.
