Ingredients

  • 1 package phyllo dough
  • 1/2 cup butter, melted
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet, melt butter over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Add spinach and cook until wilted, about 3 minutes. Remove from heat and stir in feta cheese, parsley, dill, salt, and pepper.
  • Unroll phyllo dough and cover with a damp towel to prevent drying out. Brush one sheet of phyllo with melted butter and place another sheet on top. Repeat until you have 6 layers of phyllo.
  • Spread spinach mixture over phyllo, leaving a 1-inch border around the edges. Roll up tightly, tucking in the ends as you go. Brush with melted butter.
  • Place on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy.
  • Let cool for a few minutes before slicing and serving.
