Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 8 ounces spaghetti
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 can (14.5 ounces) diced tomatoes
- 1/4 cup chopped fresh basil
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, combine the bread crumbs, Parmesan cheese, salt, black pepper, garlic powder, and paprika.
- Dip each chicken breast into the beaten eggs, then coat with the bread crumb mixture.
- Place the breaded chicken breasts on a baking sheet and bake for 20-25 minutes, or until cooked through and golden brown.
- While the chicken is baking, cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and cook for 1-2 minutes until fragrant.
- Add the diced tomatoes to the skillet and simmer for 5 minutes, stirring occasionally.
- Stir in the chopped basil and cooked spaghetti, and cook for an additional 2-3 minutes until heated through.
- Serve the breaded chicken over the spaghetti, and sprinkle with grated Parmesan cheese.
