  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 1/4 cup soy sauce
  • 2 tbsp tomato paste
  • 2 tbsp brown sugar
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 carrots, chopped
  • 2 bay leaves

    Pat the beef dry and season with salt, pepper, thyme, and paprika.

    Heat olive oil in a large oven-safe pot over medium-high heat. Sear the beef until browned on all sides, then remove.
