Ingredients

  • 2 cups basmati rice
  • 1 lb chicken or lamb, cut into bite-sized pieces
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 medium tomatoes, finely chopped
  • 1 cup plain yogurt
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped mint leaves
  • 1/2 cup fried onions
  • 1/4 cup ghee or oil
  • Salt to taste
  • Pinch of saffron soaked in 2 tbsp warm milk

Directions

    Wash and soak the basmati rice for 30 minutes, then drain.

    In a heavy-bottomed pot, heat ghee or oil and fry the sliced onions until golden brown.
