Ingredients
- 2 cups basmati rice
- 1 kg chicken, cut into pieces
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 4 green chilies, slit
- 1/2 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1 tablespoon biriyani masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 1/4 cup fried onions
- 1/4 cup ghee
- Salt to taste
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- Heat ghee in a large pot and add the sliced onions. Cook until golden brown.
- Add the ginger-garlic paste and sauté for a minute.
- Add the chicken pieces and cook until they are no longer pink.
- Add the chopped tomatoes, green chilies, biriyani masala, turmeric powder, red chili powder, and salt. Mix well.
- Cover the pot and let the chicken cook for about 10 minutes.
- In a separate pot, boil water and add the soaked rice. Cook until the rice is 70% cooked. Drain the water.
- Layer the partially cooked rice over the chicken in the pot.
- Sprinkle garam masala, mint leaves, coriander leaves, and fried onions over the rice.
- Cover the pot with a tight lid and cook on low heat for about 20 minutes.
- Serve hot with raita or salad.
