Ingredients
- 2 cups basmati rice
- 1 kg chicken, bone-in and skin-on, cut into pieces
- 2 large onions, thinly sliced
- 4 ripe tomatoes, chopped
- 4 green chilies, slit
- 1/2 cup plain yogurt
- 1 tablespoon fresh ginger-garlic paste
- 1 tablespoon biryani masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup fried onions
- 1/4 cup ghee
- 1 teaspoon saffron threads (optional, soaked in 2 tablespoons warm milk)
- Salt, to taste

Marinate chicken with yogurt, ginger-garlic paste, turmeric, red chili, and biryani masala. Refrigerate for at least 1 hour.

Rinse basmati rice thoroughly and soak it for 30 minutes.

In a large, heavy-bottomed pot, heat ghee and add sliced onions. Cook until golden brown.

Add marinated chicken to the pot. Cook until no longer pink, adding chopped tomatoes and green chilies.

Parboil the soaked rice with saffron threads and salt until 70% cooked. Drain well.

Layer the parboiled rice over the chicken mixture. Sprinkle with garam masala, mint, coriander, and fried onions.

Seal the pot with a tight lid. Cook on low heat for 20 minutes, using a tawa underneath for even cooking.

Remove from heat and let sit for 10 minutes before serving. Fluff gently and serve hot.
