Ingredients

  • 2 cups basmati rice
  • 1 kg chicken, cut into pieces
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/2 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon biriyani masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 1/4 cup fried onions
  • 1/4 cup ghee
  • Salt to taste

Instructions

  • Wash the basmati rice and soak it in water for 30 minutes.
  • Heat ghee in a large pot and add the sliced onions. Cook until golden brown.
  • Add the ginger-garlic paste and sauté for a minute.
  • Add the chicken pieces and cook until they are no longer pink.
  • Add the chopped tomatoes, green chilies, biriyani masala, turmeric powder, red chili powder, and salt. Mix well.
  • Cover the pot and let the chicken cook for about 10 minutes.
  • In a separate pot, boil water and add the soaked rice. Cook until the rice is 70% cooked. Drain the water.
  • Layer the partially cooked rice over the chicken in the pot.
  • Sprinkle garam masala, mint leaves, coriander leaves, and fried onions over the rice.
  • Cover the pot with a tight lid and cook on low heat for about 20 minutes.
  • Serve hot with raita or salad.
