Ingredients
- 2 cups basmati rice
- 1 kg chicken, cut into pieces
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 4 cloves garlic, minced
- 2 inches ginger, grated
- 2 green chilies, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 cup yogurt
- 1/4 cup milk
- 1/4 cup ghee
- 1/4 cup vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the basmati rice thoroughly and soak it in water for 30 minutes.
- Heat ghee and oil in a large pan over medium heat.
- Add the sliced onions and cook until golden brown.
- Add the minced garlic, grated ginger, and chopped green chilies. Cook for another 2 minutes.
- Add the chicken pieces and cook until they are browned on all sides.
- Add the chopped tomatoes and cook until they are soft and mushy.
- Add the turmeric powder, red chili powder, garam masala, cumin powder, and coriander powder. Mix well.
- Add the yogurt and mix until well combined.
- Drain the soaked rice and add it to the pan. Mix gently.
- Add enough water to cover the rice and bring it to a boil.
- Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and the flavors are well blended.
- Once the rice is cooked, remove the pan from heat and let it rest for 5 minutes.
- Fluff the rice with a fork and garnish with fresh coriander leaves.
- Serve hot with raita or salad.
