Ingredients

  • 2 cups basmati rice
  • 1 kg chicken, cut into pieces
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 cup yogurt
  • 1/4 cup milk
  • 1/4 cup ghee
  • 1/4 cup vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  • Wash the basmati rice thoroughly and soak it in water for 30 minutes.
  • Heat ghee and oil in a large pan over medium heat.
  • Add the sliced onions and cook until golden brown.
  • Add the minced garlic, grated ginger, and chopped green chilies. Cook for another 2 minutes.
  • Add the chicken pieces and cook until they are browned on all sides.
  • Add the chopped tomatoes and cook until they are soft and mushy.
  • Add the turmeric powder, red chili powder, garam masala, cumin powder, and coriander powder. Mix well.
  • Add the yogurt and mix until well combined.
  • Drain the soaked rice and add it to the pan. Mix gently.
  • Add enough water to cover the rice and bring it to a boil.
  • Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and the flavors are well blended.
  • Once the rice is cooked, remove the pan from heat and let it rest for 5 minutes.
  • Fluff the rice with a fork and garnish with fresh coriander leaves.
  • Serve hot with raita or salad.
