About this recipe

This modern take on a classic beef stew marries the savory richness of tender beef with the natural sweetness of prunes. Infused with aromatic herbs and a splash of red wine, this dish is perfect for cozy dinners and special occasions alike.

Ingredients

  • 1 tablespoon olive oil
  • 2 pounds stewing beef, cut into cubes
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups red wine
  • 1 cup beef broth
  • 1 cup prunes, pitted
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 bay leaf
  • 1 pinch cinnamon
  • Fresh parsley, chopped (for garnish)

Directions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the sliced onion and garlic, sauté until the onion is translucent.

  3. 3

Increase the heat and add the beef cubes, browning them on all sides.

  4. 4

Pour in the red wine and beef broth, stirring to combine.

  5. 5

Add thyme, salt, pepper, bay leaf, and cinnamon. Bring to a boil.

  6. 6

Reduce heat to low, cover, and simmer for 1 hour or until beef is tender.

  7. 7

Add prunes and simmer uncovered for another 10 minutes, allowing the sauce to thicken.

  8. 8

Remove bay leaf, garnish with fresh parsley, and serve hot.

Chef's tip

For best results, use a good-quality red wine. Adjust seasonings to taste.
