Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the beef stew meat and cook until browned on all sides.
  • Remove the meat from the pot and set aside.
  • In the same pot, add the onion and garlic and cook until softened.
  • Add the carrots and potatoes and cook for another 5 minutes.
  • Return the beef stew meat to the pot.
  • Add the beef broth, red wine, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 1 hour, or until the meat is tender.
  • Remove the bay leaf before serving.
  • Serve the beef stew hot with crusty bread or over mashed potatoes.
