Ingredients
- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and diced
- 2 cups beef broth
- 1 cup red wine
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the beef stew meat and cook until browned on all sides.
- Remove the meat from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the carrots and potatoes and cook for another 5 minutes.
- Return the beef stew meat to the pot.
- Add the beef broth, red wine, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 1 hour, or until the meat is tender.
- Remove the bay leaf before serving.
- Serve the beef stew hot with crusty bread or over mashed potatoes.
