Ingredients

  • 1 pound ground turkey
  • 1/2 cup grated zucchini
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh oregano
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • Salt and pepper to taste
  • 1 cup marinara sauce

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the ground turkey, grated zucchini, Parmesan cheese, almond flour, parsley, basil, oregano, minced garlic, beaten egg, salt, and pepper. Mix well.
  • Shape the mixture into meatballs, about 1 inch in diameter.
  • Place the meatballs on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, or until the meatballs are cooked through and browned.
  • While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  • Once the meatballs are cooked, transfer them to the saucepan with the marinara sauce. Simmer for 5 minutes to allow the flavors to meld together.
  • Serve the meatballs with additional marinara sauce, if desired.
