  • 1 cup uncooked white rice
  • 2 cups water
  • 1/2 pound ostrich meat, sliced into thin strips
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and water is absorbed.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ostrich meat and stir-fry for 2-3 minutes, or until browned.
  • Add the garlic, peas, and carrots to the skillet and stir-fry for an additional 2-3 minutes.
  • Push the meat and vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the meat and vegetables.
  • Add the cooked rice and soy sauce to the skillet and stir-fry for 2-3 minutes, or until heated through.
  • Season with salt and pepper to taste and serve hot.
