Ingredients

  • 2 cups couscous
  • 1 lb lamb, cut into cubes
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • 1. In a large pot, heat the olive oil over medium heat.
  • 2. Add the lamb cubes and cook until browned on all sides.
  • 3. Remove the lamb from the pot and set aside.
  • 4. In the same pot, add the onion, carrots, zucchini, bell pepper, and garlic.
  • 5. Cook until the vegetables are softened, about 5 minutes.
  • 6. Add the cumin, paprika, turmeric, cinnamon, and cayenne pepper to the pot.
  • 7. Stir to coat the vegetables in the spices.
  • 8. Return the lamb to the pot and add the chicken broth.
  • 9. Bring the mixture to a boil, then reduce heat to low and cover.
  • 10. Simmer for 1 hour, or until the lamb is tender.
  • 11. While the lamb is simmering, prepare the couscous according to package instructions.
  • 12. Fluff the cooked couscous with a fork.
  • 13. Serve the lamb and vegetables over the couscous.
