Ingredients
- 2 cups couscous
- 1 lb lamb, cut into cubes
- 1 onion, chopped
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 2 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- 1. In a large pot, heat the olive oil over medium heat.
- 2. Add the lamb cubes and cook until browned on all sides.
- 3. Remove the lamb from the pot and set aside.
- 4. In the same pot, add the onion, carrots, zucchini, bell pepper, and garlic.
- 5. Cook until the vegetables are softened, about 5 minutes.
- 6. Add the cumin, paprika, turmeric, cinnamon, and cayenne pepper to the pot.
- 7. Stir to coat the vegetables in the spices.
- 8. Return the lamb to the pot and add the chicken broth.
- 9. Bring the mixture to a boil, then reduce heat to low and cover.
- 10. Simmer for 1 hour, or until the lamb is tender.
- 11. While the lamb is simmering, prepare the couscous according to package instructions.
- 12. Fluff the cooked couscous with a fork.
- 13. Serve the lamb and vegetables over the couscous.
