Ingredients
- 2 pounds beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and diced
- 1 can diced tomatoes
- 1 cup beef broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and cook until softened.
- Add the beef stew meat and brown on all sides.
- Add the carrots, potatoes, diced tomatoes, beef broth, cumin, paprika, cinnamon, salt, and pepper.
- Bring the stew to a boil, then reduce heat to low and simmer for 1-2 hours, or until the meat is tender.
- Serve hot, garnished with fresh parsley.
