Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cooked chicken breast, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed.
  • In a large bowl, combine the cooked quinoa, shredded chicken, black beans, corn kernels, diced bell peppers, red onion, and cilantro.
  • In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.
