Ingredients

  • 3 pounds beef short ribs
  • 1/4 cup soy sauce
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. 1

In a large bowl, mix soy sauce, gochujang, honey, brown sugar, sesame oil, garlic, ginger, cumin, coriander, turmeric, cinnamon, cloves, cardamom, salt, and black pepper.

  2. 2

Coat the short ribs with the marinade and refrigerate for at least 4 hours.

  3. 3

Preheat your grill to medium-high heat.

  4. 4

Remove ribs from marinade; allow excess to drip off and reserve for basting.

  5. 5

Grill ribs over indirect heat for 10-12 minutes per side, basting occasionally.

  6. 6

Let ribs rest for 5 minutes, then garnish with cilantro before serving.

Chef's tip

Experiment with grilling times to achieve your preferred level of doneness. The resting period after grilling allows the juices to redistribute within the ribs, enhancing their flavor.
