  • 3 pounds beef short ribs
  • 1/4 cup soy sauce
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  • In a large bowl, combine soy sauce, gochujang, honey, brown sugar, sesame oil, garlic, ginger, cumin, coriander, turmeric, cinnamon, cloves, cardamom, salt, and black pepper. Mix well to make the marinade.
  • Add the beef short ribs to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  • Preheat grill to medium-high heat. Remove the ribs from the marinade, allowing any excess marinade to drip off. Reserve the marinade for basting.
