Ingredients

  • 2 cups aged basmati rice
  • 1 large onion, thinly sliced
  • 1 cup mixed vegetables (carrots, peas, cauliflower, bell peppers)
  • 2 tablespoons olive oil
  • 1/2 cup yogurt or cashew yogurt
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup fried onions
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 4 cloves
  • 4 green cardamom pods
  • 1-inch cinnamon stick
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 cups vegetable broth

Directions
