Ingredients

  • 1 pound seitan, sliced into 1-inch thick steaks
  • 2 tablespoons olive oil
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Directions

  1. 1

Preheat the oven to 350°F (175°C).

  2. 2

Mix flour, garlic powder, onion powder, smoked paprika, salt, and pepper in a bowl.

  3. 3

Dredge seitan steaks in the flour mixture, shaking off excess.

  4. 4

Heat olive oil in a skillet over medium-high heat, and sear seitan steaks until golden, about 3 minutes per side.

  5. 5

In the same skillet, sauté onion and garlic until softened, then add mushrooms and cook until tender.

  6. 6

Combine vegetable broth, soy sauce, cornstarch, and water in a bowl, then pour into the skillet, stirring until thickened.

  7. 7

Place seitan in a baking dish, pour the mushroom gravy over the top, cover with foil, and bake for 20 minutes.

  8. 8

Serve the vegan steaks hot with your choice of sides.

Chef's tip

Ensure seitan is not overcooked to keep its texture tender. Adjust seasoning as desired.
