Ingredients

  • 4 large potatoes, boiled and mashed
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves, chopped
  • 1 cup chickpea flour
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Pinch of baking soda
  • Water as needed
  • 4 Pav buns
  • Green chutney (homemade or store-bought)
  • Tamarind chutney (homemade or store-bought)
  • Dry garlic chutney (homemade or store-bought)
  • Butter for toasting
  • 1 onion, sliced
  • Sev for garnish (optional)

Directions

    Heat oil in a pan and add mustard seeds and cumin seeds. Let them crackle.

    Add turmeric, red chili powder, and salt. Sauté for a minute.

    Mix in mashed potatoes, cooking until well blended. Add coriander leaves and cool.

    Prepare batter by combining chickpea flour, turmeric, chili powder, baking soda, and water till smooth.
