Ingredients
- 4 large potatoes, boiled and mashed
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves, chopped
- 1 cup chickpea flour
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Pinch of baking soda
- Water as needed
- 4 Pav buns
- Green chutney (homemade or store-bought)
- Tamarind chutney (homemade or store-bought)
- Dry garlic chutney (homemade or store-bought)
- Butter for toasting
- 1 onion, sliced
- Sev for garnish (optional)

Heat oil in a pan and add mustard seeds and cumin seeds. Let them crackle.

Add turmeric, red chili powder, and salt. Sauté for a minute.

Mix in mashed potatoes, cooking until well blended. Add coriander leaves and cool.

Prepare batter by combining chickpea flour, turmeric, chili powder, baking soda, and water till smooth.

Heat oil and dip potato mixture into batter, frying until golden.
