About this recipe

This Modern Turkish Vegetable Delight is a flavorful and nutrient-rich dish, perfect for vegetarians and vegans. Roasted fresh vegetables, including eggplants, zucchinis, and bell peppers, are beautifully combined with a homemade tomato-garlic sauce. Serve it as a delightful main course or a vibrant side dish that's both visually appealing and incredibly tasty.

Ingredients

  • 2 medium eggplants, sliced into rounds
  • 2 medium zucchinis, sliced into rounds
  • 2 bell peppers, cut into strips
  • 1 large onion, thinly sliced
  • 4 ripe tomatoes, diced
  • 4 cloves of garlic, minced
  • 3 tablespoons olive oil, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, for garnish (optional)

Directions

  1. 1

Preheat the oven to 400°F (200°C).

  2. 2

Slice and arrange the eggplants, zucchinis, bell peppers, and onion on a large baking sheet.

  3. 3

Drizzle with 2 tablespoons of olive oil and sprinkle with cumin, paprika, oregano, salt, and pepper. Toss to coat.

  4. 4

Roast the vegetables for 25-30 minutes until tender and slightly browned.

  5. 5

Meanwhile, heat 1 tablespoon olive oil in a saucepan over medium heat.

  6. 6

Sauté minced garlic for 1-2 minutes, then add diced tomatoes. Cook for 5-7 minutes until tomatoes soften.

  7. 7

Season the sauce with salt and pepper.

  8. 8

Transfer roasted vegetables to a platter, pour over the tomato-garlic sauce, and garnish with fresh herbs if desired. Serve warm.

Chef's tip

Ensure the vegetables are evenly coated in spices for maximum flavor. Adjust seasoning to taste.
