- 2 eggplants
- 2 zucchinis
- 2 bell peppers
- 1 onion
- 4 tomatoes
- 4 cloves of garlic
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Slice the eggplants, zucchinis, bell peppers, and onion into thin rounds.
- 3. Place the sliced vegetables on a baking sheet and drizzle with olive oil.
