Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup raisins
  • 1/2 cup slivered almonds
  • 1/4 cup chopped fresh parsley

Directions

    Rinse the rice in cold water until the water is clear.

    Boil 2 cups of water in a saucepan. Add rice, cover, reduce heat to low, and simmer for 18-20 minutes.

    While the rice cooks, heat olive oil in a skillet over medium heat and sauté onion and garlic until translucent.

    Add cumin, coriander, paprika, cinnamon, turmeric, salt, and pepper. Stir and cook until fragrant.
