Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup raisins
  • 1/2 cup slivered almonds
  • 1/4 cup chopped fresh parsley

Instructions

  • Rinse the rice in cold water until the water runs clear.
  • In a medium saucepan, bring the water to a boil. Add the rice and stir. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
  • While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 3-4 minutes, or until the onion is translucent.
  • Add the cumin, coriander, paprika, cinnamon, turmeric, salt, and black pepper to the skillet. Stir to combine and cook for 1-2 minutes, or until fragrant.
  • Add the raisins and almonds to the skillet and stir to combine. Cook for 2-3 minutes, or until the raisins are plump and the almonds are lightly toasted.
  • Add the cooked rice to the skillet and stir to combine. Cook for 2-3 minutes, or until the rice is heated through and the flavors have melded together.
  • Remove the skillet from the heat and stir in the chopped parsley.
