Ingredients
- 500g beef, thinly sliced
- 2 large potatoes, peeled and thinly sliced
- 1 onion, thinly sliced
- 4 eggs
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
- Add the beef slices and cook until browned. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and sauté the onion until translucent.
- Add the potato slices to the skillet and cook until they are golden brown and tender.
- In a bowl, beat the eggs and season with salt and pepper.
- Add the cooked beef slices to the skillet with the potatoes and onions.
- Pour the beaten eggs over the beef, potatoes, and onions in the skillet.
- Cook the tortilha on low heat for about 10 minutes or until the eggs are set.
- Carefully flip the tortilha using a large plate or lid, and cook for another 5 minutes on the other side.
- Remove from heat and let it cool slightly before serving.
- Cut the tortilha into wedges and serve warm.
