Ingredients

  • 500g beef, thinly sliced
  • 2 large potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 4 eggs
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
  • Add the beef slices and cook until browned. Remove from the skillet and set aside.
  • In the same skillet, add another tablespoon of olive oil and sauté the onion until translucent.
  • Add the potato slices to the skillet and cook until they are golden brown and tender.
  • In a bowl, beat the eggs and season with salt and pepper.
  • Add the cooked beef slices to the skillet with the potatoes and onions.
  • Pour the beaten eggs over the beef, potatoes, and onions in the skillet.
  • Cook the tortilha on low heat for about 10 minutes or until the eggs are set.
  • Carefully flip the tortilha using a large plate or lid, and cook for another 5 minutes on the other side.
  • Remove from heat and let it cool slightly before serving.
  • Cut the tortilha into wedges and serve warm.
