  • 1 block of firm tofu, cubed
  • 1/4 cup of peanut butter
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of honey
  • 1 clove of garlic, minced
  • 1 teaspoon of ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup of broccoli florets
  • 1/2 cup of sliced carrots
  • 1/4 cup of peanuts, chopped
  • Cooked rice or noodles for serving

Instructions

  • 1. In a small bowl, mix together the peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger to make the sauce.
  • 2. In a large pan or wok, heat some oil over medium heat. Add the tofu cubes and cook until they are golden brown on all sides.
