- 1 block of firm tofu, cubed
- 1/4 cup of peanut butter
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- 1 clove of garlic, minced
- 1 teaspoon of ginger, grated
- 1 red bell pepper, sliced
- 1 cup of broccoli florets
- 1/2 cup of sliced carrots
- 1/4 cup of peanuts, chopped
- Cooked rice or noodles for serving
Instructions
- 1. In a small bowl, mix together the peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger to make the sauce.
- 2. In a large pan or wok, heat some oil over medium heat. Add the tofu cubes and cook until they are golden brown on all sides.
- 3. Add the sliced bell pepper, broccoli, and carrots to the pan. Cook for a few minutes until the vegetables are tender-crisp.
- 4. Pour the peanut sauce over the tofu and vegetables. Stir well to coat everything in the sauce.
- 5. Cook for another 2-3 minutes, until everything is heated through.
- 6. Serve the stir-fry over cooked rice or noodles, garnished with chopped peanuts.
