Ingredients
- 1 block (14 oz) firm tofu, drained and cubed
- 2 tablespoons peanut oil, divided
- 1/2 cup creamy peanut butter
- 1/4 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 garlic clove, minced
- 1 teaspoon grated ginger
- 1-2 teaspoons sriracha
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup sliced carrots
- 1/4 cup chopped peanuts
- Cooked rice or noodles, for serving

Press and cube the tofu. Heat 1 tablespoon of peanut oil in a skillet over medium-high heat. Cook tofu cubes until golden brown on all sides, about 10-12 minutes. Remove from pan and set aside.

In the same skillet, add the remaining 1 tablespoon of peanut oil. Sauté bell pepper, broccoli, and carrots until tender-crisp, about 5-7 minutes.

In a blender, combine peanut butter, soy sauce, rice vinegar, lime juice, honey, garlic, ginger, and sriracha. Blend until smooth, adding water if needed for consistency.
