Ingredients
- 1 lb. boneless, skinless chicken thighs
- 1/4 cup olive oil
- 2 tbsp. lemon juice
- 2 cloves garlic, minced
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/2 tsp. ground coriander
- 1/2 tsp. ground cinnamon
- 1/4 tsp. cayenne pepper
- Salt and pepper, to taste
- 4 pita breads
- 1/2 cup chopped tomatoes
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup plain yogurt
- 1 tbsp. lemon juice
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, coriander, cinnamon, cayenne pepper, salt, and pepper.
- Add the chicken thighs to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 1 hour, or up to overnight.
- Preheat a grill or grill pan to medium-high heat.
- Remove the chicken from the marinade and discard any excess marinade. Grill the chicken for 6-8 minutes per side, or until cooked through.
- While the chicken is cooking, prepare the vegetables. In a medium bowl, combine the tomatoes, cucumber, red onion, parsley, and mint.
- In a small bowl, whisk together the yogurt, lemon juice, garlic, salt, and pepper.
- To assemble the shawarma, place a pita bread on a plate and top with some of the chicken and vegetable mixture. Drizzle with the yogurt sauce and serve immediately.
