Ingredients

  • 1 lb. boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tbsp. lemon juice
  • 2 cloves garlic, minced
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. cayenne pepper
  • Salt and pepper, to taste
  • 4 pita breads
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup plain yogurt
  • 1 tbsp. lemon juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  • In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, coriander, cinnamon, cayenne pepper, salt, and pepper.
  • Add the chicken thighs to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 1 hour, or up to overnight.
  • Preheat a grill or grill pan to medium-high heat.
  • Remove the chicken from the marinade and discard any excess marinade. Grill the chicken for 6-8 minutes per side, or until cooked through.
  • While the chicken is cooking, prepare the vegetables. In a medium bowl, combine the tomatoes, cucumber, red onion, parsley, and mint.
  • In a small bowl, whisk together the yogurt, lemon juice, garlic, salt, and pepper.
  • To assemble the shawarma, place a pita bread on a plate and top with some of the chicken and vegetable mixture. Drizzle with the yogurt sauce and serve immediately.
