Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 pita breads
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup plain yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions

    Whisk olive oil, lemon juice, garlic, cumin, paprika, coriander, cinnamon, cayenne, salt, and pepper in a large bowl.
