Ingredients

  • 1 lb brain, cut into small pieces
  • 2 sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 4 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the brain and cook until browned on all sides, about 10 minutes.
  • Add the sweet potatoes, cumin, coriander, paprika, cinnamon, salt, and pepper and stir to combine.
  • Pour in the chicken broth and bring to a boil.
  • Reduce the heat to low and simmer for 30-40 minutes, or until the sweet potatoes are tender and the brain is cooked through.
  • Serve hot, garnished with fresh herbs if desired.
