Ingredients
- 1 lb brain, cut into small pieces
- 2 sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- 4 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the brain and cook until browned on all sides, about 10 minutes.
- Add the sweet potatoes, cumin, coriander, paprika, cinnamon, salt, and pepper and stir to combine.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low and simmer for 30-40 minutes, or until the sweet potatoes are tender and the brain is cooked through.
- Serve hot, garnished with fresh herbs if desired.
