Ingredients

  • 8 ounces of steak, thinly sliced
  • 1 tablespoon of olive oil
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups of shredded cheese (such as cheddar or Monterey Jack)
  • Optional toppings: sour cream, guacamole, salsa

Instructions

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the sliced steak to the skillet and season with cumin, chili powder, salt, and pepper. Cook until the steak is browned and cooked to your desired level of doneness. Remove from the skillet and set aside.
  • In the same skillet, add the bell pepper and onion. Cook until the vegetables are tender and slightly caramelized.
  • Remove the vegetables from the skillet and set aside.
  • Place a tortilla in the skillet and sprinkle one side with shredded cheese.
  • Top the cheese with a portion of the cooked steak and vegetables.
  • Fold the tortilla in half, pressing down gently with a spatula to seal the quesadilla.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat with the remaining tortillas and filling.
  • Serve the steak quesadillas hot with optional toppings like sour cream, guacamole, and salsa.
  • Enjoy!
