Ingredients
- 1 lb pork tenderloin, thinly sliced
- 1 block firm tofu, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a small bowl, mix together soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes. Set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add pork slices and cook until browned, about 2-3 minutes per side. Remove from skillet and set aside.
- In the same skillet, add tofu cubes and cook until golden brown on all sides, about 5 minutes. Remove from skillet and set aside.
- Add more oil to the skillet if needed, then add garlic and ginger. Cook until fragrant, about 1 minute.
- Add bell peppers and onion to the skillet. Cook until vegetables are tender-crisp, about 3-4 minutes.
- Return pork and tofu to the skillet. Pour the sauce over the mixture and toss to coat everything evenly. Cook for another 2-3 minutes, until heated through.
- Season with salt and pepper to taste.
- Serve hot over steamed rice or noodles.
