Ingredients

  • 1 lb pork tenderloin, thinly sliced
  • 1 block firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 3 tbsp vegetable oil

Directions

  1. 1

Mix soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes in a small bowl; set aside.

  2. 2

Heat 1 tbsp oil in a large skillet over medium-high heat. Cook pork until browned, about 3 minutes per side. Remove and set aside.

  3. 3

In the same skillet, add 1 tbsp oil and cook tofu until golden on all sides, about 5 minutes. Remove and set aside.

  4. 4

Add remaining oil, garlic, and ginger to skillet. Sauté until fragrant, about 1 minute.

  5. 5

Add bell peppers and onion; stir-fry until crisp-tender, about 3 minutes.

  6. 6

Return pork and tofu to skillet; pour sauce over the mixture, tossing to coat. Cook for 2-3 minutes until heated through.

  7. 7

Season with salt and pepper to taste.

  8. 8

Serve immediately over steamed rice or noodles.

Chef's tip

For extra heat, consider adding a splash of your favorite chili sauce or fresh chilies.
