Ingredients

  • 1 lb pork tenderloin, thinly sliced
  • 1 block firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  • In a small bowl, mix together soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes. Set aside.
  • In a large skillet or wok, heat vegetable oil over medium-high heat. Add pork slices and cook until browned, about 2-3 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add tofu cubes and cook until golden brown on all sides, about 5 minutes. Remove from skillet and set aside.
  • Add more oil to the skillet if needed, then add garlic and ginger. Cook until fragrant, about 1 minute.
  • Add bell peppers and onion to the skillet. Cook until vegetables are tender-crisp, about 3-4 minutes.
  • Return pork and tofu to the skillet. Pour the sauce over the mixture and toss to coat everything evenly. Cook for another 2-3 minutes, until heated through.
  • Season with salt and pepper to taste.
  • Serve hot over steamed rice or noodles.
