Ingredients

  • 8 ounces spaghetti
  • 4 ounces pancetta or bacon, diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  • Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  • In a large skillet, cook the pancetta or bacon over medium heat until crispy. Remove from the skillet and set aside.
  • In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  • In a bowl, whisk together the eggs, Parmesan cheese, and chopped parsley. Season with salt and black pepper.
  • Add the cooked spaghetti to the skillet with the garlic. Pour the egg mixture over the spaghetti and toss well to coat. The heat from the spaghetti will cook the eggs and create a creamy sauce.
  • Add the cooked pancetta or bacon back to the skillet and toss to combine.
  • Serve the spaghetti carbonara hot, garnished with additional Parmesan cheese and parsley if desired.
