Ingredients
- 1 cup sushi rice
- 1 1/4 cups water
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 4 sheets nori
- 1 avocado, sliced
- 1/2 cucumber, sliced
- 1/2 red bell pepper, sliced
- 4 ounces smoked salmon, sliced
- 1 tablespoon black sesame seeds
Instructions
- Rinse the sushi rice in cold water until the water runs clear.
- Combine the rice and water in a medium saucepan and bring to a boil.
- Reduce the heat to low, cover, and simmer for 18 minutes.
- Remove from heat and let stand for 10 minutes.
- In a small saucepan, combine the rice vinegar, sugar, and salt.
- Heat over low heat until the sugar dissolves.
- Transfer the rice to a large bowl and add the vinegar mixture.
- Stir gently to combine.
- Place a sheet of nori on a sushi mat.
- Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
- Arrange the avocado, cucumber, red bell pepper, and smoked salmon in a line across the center of the rice.
- Sprinkle with black sesame seeds.
- Roll up the sushi, using the mat to help you.
- Moisten the top border of the nori with water and press to seal.
- Repeat with the remaining ingredients.
- Slice the sushi rolls into 1-inch pieces and serve.
