Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 sheets nori
  • 1 avocado, sliced
  • 1/2 cucumber, sliced
  • 1/2 red bell pepper, sliced
  • 4 ounces smoked salmon, sliced
  • 1 tablespoon black sesame seeds

Instructions

  • Rinse the sushi rice in cold water until the water runs clear.
  • Combine the rice and water in a medium saucepan and bring to a boil.
  • Reduce the heat to low, cover, and simmer for 18 minutes.
  • Remove from heat and let stand for 10 minutes.
  • In a small saucepan, combine the rice vinegar, sugar, and salt.
  • Heat over low heat until the sugar dissolves.
  • Transfer the rice to a large bowl and add the vinegar mixture.
  • Stir gently to combine.
  • Place a sheet of nori on a sushi mat.
  • Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  • Arrange the avocado, cucumber, red bell pepper, and smoked salmon in a line across the center of the rice.
  • Sprinkle with black sesame seeds.
  • Roll up the sushi, using the mat to help you.
  • Moisten the top border of the nori with water and press to seal.
