Ingredients
- 1 lb shark fins
- 8 cups chicken broth
- 1 cup sliced mushrooms
- 1/4 cup soy sauce
- 1/4 cup rice wine
- 1 tbsp sugar
- 1 tsp salt
- 1/4 tsp white pepper
- 2 tbsp cornstarch
- 2 tbsp water
- 2 eggs, beaten
- 2 green onions, thinly sliced
Instructions
- Soak the shark fins in cold water for at least 2 hours, then rinse and drain.
- In a large pot, bring the chicken broth to a boil.
- Add the shark fins, mushrooms, soy sauce, rice wine, sugar, salt, and white pepper.
- Reduce heat and simmer for 2-3 hours, until the shark fins are tender.
- In a small bowl, mix the cornstarch and water to make a slurry.
- Slowly pour the slurry into the soup, stirring constantly, until the soup thickens.
- Slowly pour in the beaten eggs, stirring gently, until the eggs are cooked.
- Garnish with sliced green onions and serve hot.
