Ingredients

  • 1 lb shark fins
  • 8 cups chicken broth
  • 1 cup sliced mushrooms
  • 1/4 cup soy sauce
  • 1/4 cup rice wine
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 eggs, beaten
  • 2 green onions, thinly sliced

Instructions

  • Soak the shark fins in cold water for at least 2 hours, then rinse and drain.
  • In a large pot, bring the chicken broth to a boil.
  • Add the shark fins, mushrooms, soy sauce, rice wine, sugar, salt, and white pepper.
  • Reduce heat and simmer for 2-3 hours, until the shark fins are tender.
  • In a small bowl, mix the cornstarch and water to make a slurry.
  • Slowly pour the slurry into the soup, stirring constantly, until the soup thickens.
  • Slowly pour in the beaten eggs, stirring gently, until the eggs are cooked.
  • Garnish with sliced green onions and serve hot.
