Shahi Paneer is a sumptuous Indian dish where soft cubes of paneer are enveloped in a creamy, fragrant gravy. Ingredients

  • 200 grams paneer, cubed
  • 2 tablespoons ghee or vegetable oil
  • 1 large onion, finely chopped
  • 2 ripe tomatoes, pureed
  • 12 cashews, soaked and ground
  • 1 tablespoon fresh ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon kasuri methi
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh coriander leaves for garnishing

Directions

    Heat ghee in a pan over medium heat. Add onions and sauté until golden brown.

    Mix in ginger-garlic paste and sauté for a minute until aromatic.

    Stir in the tomato puree and cook until the ghee separates.

    Blend soaked cashews into a smooth paste and add to the pan.

    Mix in turmeric, red chili powder, garam masala, and salt. Cook for 2-3 minutes.

Chef's tip
