Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup peach schnapps
  • 1/4 cup vodka
  • 1/4 cup cranberry juice
  • 1/4 cup orange juice
  • 1/4 cup grenadine syrup
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda

Instructions

  • Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  • Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • While the cakes are baking, prepare the soaking syrup by combining the peach schnapps, vodka, cranberry juice, orange juice, and grenadine syrup in a small saucepan. Heat over medium heat until the mixture comes to a simmer. Remove from heat and set aside.
  • Once the cakes are done baking, remove them from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  • Using a skewer or toothpick, poke holes all over the surface of the cakes. Slowly pour the soaking syrup over the cakes, allowing it to seep into the holes.
  • In a medium bowl, whisk together the powdered sugar and cornstarch. Gradually add in the milk, whisking until smooth and creamy.
  • Spread a layer of the frosting on top of one of the cakes. Place the second cake on top and frost the entire cake with the remaining frosting.
  • Decorate the cake as desired and refrigerate for at least 1 hour before serving.
