Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup water
  • 1 cup mashed potatoes
  • 1 cup cooked peas
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for frying

Instructions

  • In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well.
  • Add the cold and cubed unsalted butter to the flour mixture. Use your fingers to rub the butter into the flour until it resembles coarse crumbs.
  • Gradually add water to the mixture, a little at a time, until a dough forms. Knead the dough for a few minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
  • In a separate bowl, combine the mashed potatoes, cooked peas, chopped onion, minced garlic, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well to combine all the ingredients.
  • Preheat the oven to 350°F (175°C).
  • Divide the dough into two equal portions. Roll out one portion of the dough into a circle that is slightly larger than the size of your cake pan.
  • Place the rolled-out dough into the cake pan, making sure it covers the bottom and sides of the pan.
  • Spread the potato and pea mixture evenly over the dough in the cake pan.
  • Roll out the second portion of the dough into a circle that is slightly larger than the size of your cake pan. Place it on top of the potato and pea mixture, sealing the edges with the bottom layer of dough.
  • Using a sharp knife, make a few slits on the top layer of dough to allow steam to escape during baking.
  • Bake the samosa cake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  • Remove the samosa cake from the oven and let it cool for a few minutes before serving.
  • Serve the samosa cake warm, cut into slices. Enjoy!
