Ingredients

  • 2 salmon fillets
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cold sparkling water
  • 4 large potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Instructions

  • Preheat the oven to 425°F (220°C).
  • Cut the potatoes into thick chips and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  • Bake the chips in the preheated oven for 30-35 minutes, or until golden and crispy.
  • In the meantime, prepare the batter for the salmon. In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
  • Gradually add the sparkling water to the dry ingredients, whisking until smooth and well combined.
  • Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
  • Dip each salmon fillet into the batter, making sure it is fully coated.
  • Carefully place the battered salmon fillets into the hot oil and fry for 4-5 minutes, or until golden brown and crispy. Remove from the oil and drain on paper towels.
  • In a small bowl, mix together the mayonnaise, lemon juice, dill, parsley, and chives to make a dipping sauce.
  • Serve the crispy salmon fish and chips with the homemade chips and the dipping sauce on the side.
