A delicious and healthy twist on the classic fish and chips recipe, using salmon instead of traditional white fish. The salmon is coated in a crispy batter and served with homemade chips for a satisfying meal.

Ingredients
- 2 salmon fillets
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cold sparkling water
- 4 large potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh chives
Instructions
- Preheat the oven to 425°F (220°C).
- Cut the potatoes into thick chips and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
- Bake the chips in the preheated oven for 30-35 minutes, or until golden and crispy.
- In the meantime, prepare the batter for the salmon. In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
- Gradually add the sparkling water to the dry ingredients, whisking until smooth and well combined.
- Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Dip each salmon fillet into the batter, making sure it is fully coated.
- Carefully place the battered salmon fillets into the hot oil and fry for 4-5 minutes, or until golden brown and crispy. Remove from the oil and drain on paper towels.
- In a small bowl, mix together the mayonnaise, lemon juice, dill, parsley, and chives to make a dipping sauce.
- Serve the crispy salmon fish and chips with the homemade chips and the dipping sauce on the side.
