Ingredients
- 2 cups basmati rice
- 1 lb lamb, cut into cubes
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons ghee or clarified butter
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1 cup plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon cilantro, chopped
- 1 tablespoon parsley, chopped
Directions
- 1
Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- 2
In a large pot, heat ghee over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent and the garlic is fragrant.
- 3
Brown the lamb cubes in the pot, turning occasionally to ensure even cooking.
- 4
Stir in cumin, coriander, turmeric, cinnamon, cardamom, black pepper, and salt; cook for another minute to release the aromas.
- 5
Add the rinsed basmati rice and mix to coat thoroughly with the spices.
- 6
Pour in enough water to cover the rice by about an inch. Bring to a boil, reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
- 7
While rice is cooking, combine yogurt, lemon juice, cilantro, and parsley in a bowl. Mix well and season with salt to taste.
- 8
Fluff the cooked rice with a fork, transfer to a serving platter, and top with lamb. Serve with yogurt sauce on the side.
Chef's tip
