  • 2 cups basmati rice
  • 1 lb lamb, cut into cubes
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons ghee or clarified butter
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon parsley, chopped

Directions

    Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

    In a large pot, heat ghee over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent and the garlic is fragrant.

    Brown the lamb cubes in the pot, turning occasionally to ensure even cooking.

    Stir in cumin, coriander, turmeric, cinnamon, cardamom, black pepper, and salt; cook for another minute to release the aromas.
