Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup white wine
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a saucepan, heat the broth over low heat.
  • In a separate large pan, melt 1 tbsp of butter over medium heat.
  • Add the onion and garlic, sauté until translucent.
  • Add the Arborio rice and toast for 2-3 minutes.
  • Pour in the white wine and stir until absorbed.
  • Begin adding the warm broth, one ladle at a time, stirring constantly until absorbed before adding more.
  • Continue this process until the rice is creamy and cooked to al dente, about 18-20 minutes.
  • Stir in the remaining butter and Parmesan cheese.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.
