Ingredients
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a saucepan, heat the broth over low heat.
- In a separate large pan, melt 1 tbsp of butter over medium heat.
- Add the onion and garlic, sauté until translucent.
- Add the Arborio rice and toast for 2-3 minutes.
- Pour in the white wine and stir until absorbed.
- Begin adding the warm broth, one ladle at a time, stirring constantly until absorbed before adding more.
- Continue this process until the rice is creamy and cooked to al dente, about 18-20 minutes.
- Stir in the remaining butter and Parmesan cheese.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
