Ingredients

  • 1/2 cup tamarind pulp
  • 2 large tomatoes, chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon fenugreek seeds
  • 1 tablespoon ghee
  • 1 sprig curry leaves
  • 2 cloves garlic, minced
  • 3 cups water
  • Salt to taste
  • 1 tablespoon jaggery
  • Fresh coriander leaves, chopped, for garnish

Directions

    Heat ghee in a large pot over medium heat.

    Add mustard seeds, cumin seeds, and fenugreek seeds until they crackle.

Chef's tip

For a milder version, reduce the red chili powder. Adjust jaggery to taste if a sweeter balance is desired.
