Ingredients

  • 2 pounds pork belly
  • 4 cups chicken broth
  • 2 cups water
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 4 packs ramen noodles
  • 4 soft-boiled eggs
  • 4 green onions, chopped
  • 1 cup bean sprouts
  • 1 cup corn kernels
  • 1 sheet nori, cut into strips

Instructions

  • In a large pot, heat vegetable oil over medium heat. Add pork belly and cook until browned on all sides. Remove from pot and set aside.
  • In the same pot, add onion, garlic, and ginger. Cook until fragrant.
  • Add chicken broth, water, soy sauce, mirin, and sesame oil to the pot. Bring to a boil.
  • Reduce heat to low and add the pork belly back to the pot. Simmer for 1 hour, until pork is tender.
  • While the broth is simmering, cook the ramen noodles according to package instructions. Drain and set aside.
  • Once the pork is tender, remove it from the pot and slice it into thin pieces.
  • Divide the cooked ramen noodles among 4 bowls. Top with sliced pork, soft-boiled eggs, green onions, bean sprouts, corn kernels, and nori strips.
  • Ladle the hot broth over the noodles and toppings. Serve hot and enjoy!
