Ingredients
- 2 pounds pork belly
- 4 cups chicken broth
- 2 cups water
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 4 packs ramen noodles
- 4 soft-boiled eggs
- 4 green onions, chopped
- 1 cup bean sprouts
- 1 cup corn kernels
- 1 sheet nori, cut into strips
Instructions
- In a large pot, heat vegetable oil over medium heat. Add pork belly and cook until browned on all sides. Remove from pot and set aside.
- In the same pot, add onion, garlic, and ginger. Cook until fragrant.
- Add chicken broth, water, soy sauce, mirin, and sesame oil to the pot. Bring to a boil.
- Reduce heat to low and add the pork belly back to the pot. Simmer for 1 hour, until pork is tender.
- While the broth is simmering, cook the ramen noodles according to package instructions. Drain and set aside.
- Once the pork is tender, remove it from the pot and slice it into thin pieces.
- Divide the cooked ramen noodles among 4 bowls. Top with sliced pork, soft-boiled eggs, green onions, bean sprouts, corn kernels, and nori strips.
- Ladle the hot broth over the noodles and toppings. Serve hot and enjoy!
