Ingredients

  • 2 cups raw cashews
  • 1/4 cup nutritional yeast
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 clove garlic
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp paprika

Instructions

  • Soak cashews in water for at least 4 hours or overnight.
  • Drain cashews and add to a blender with nutritional yeast, lemon juice, water, garlic, salt, onion powder, and paprika.
  • Blend until smooth and creamy, scraping down the sides as needed.
  • Transfer mixture to a cheesecloth-lined strainer set over a bowl.
  • Cover and let sit at room temperature for 24-48 hours, until thickened.
  • Remove from cheesecloth and store in an airtight container in the refrigerator for up to 1 week.
