Ingredients

  • 1/4 cup of plain yogurt
  • Cheese cloth
  • Salt to taste

Instructions

  • Heat the milk in a saucepan until it reaches 180°F, stirring occasionally to prevent scorching.
  • Remove from heat and let it cool to 110°F.
  • Stir in the yogurt and mix well.
  • Cover the saucepan with a lid and let it sit at room temperature for 12-24 hours, until thickened.
  • Line a colander with cheese cloth and pour the mixture into it.
  • Let it drain for 6-8 hours, then sprinkle with salt to taste.
  • Transfer the cheese to a container and refrigerate for at least 2 hours before serving.
