Revamp your breakfast routine with this modern, protein-packed take on the classic poptart. Perfect for a quick, nutritious breakfast or a post-workout snack, these protein poptarts combine flavorful ingredients with a satisfying texture, making them a hit with both kids and adults. Enjoy the blend of almond and coconut flour, protein powder, and sugar-free jam for a delightful, guilt-free treat.

Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1/4 cup unsweetened almond milk
  • 1/4 cup sugar-free jam
  • 1/4 cup powdered erythritol
  • 1 tablespoon unsweetened almond milk
  • 1/4 teaspoon vanilla extract

Directions

  1. 1

Preheat the oven to 350°F (175°C).

  2. 2

In a large bowl, whisk together the almond flour, protein powder, coconut flour, erythritol, and salt.

  3. 3

Add the melted coconut oil, egg, and almond milk to the dry ingredients and mix until a dough forms.

  4. 4

Divide the dough in half and roll each into a rectangle about 1/4 inch thick.

  5. 5

Spread the jam over one rectangle, keeping a 1/2 inch border around the edges.

  6. 6

Cover with the second rectangle and press edges to seal. Cut into 8 rectangles.

  7. 7

Place on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.

  8. 8

For the glaze, whisk powdered erythritol, almond milk, and vanilla extract. Drizzle over warm poptarts and serve.

Chef's tip

Using sugar-free jam and erythritol keeps this recipe low in sugar, making it a diabetes-friendly option. Ensure the dough is well-sealed to prevent leakage during baking.
