Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1/4 cup unsweetened almond milk
  • 1/4 cup sugar-free jam
  • 1/4 cup powdered erythritol
  • 1 tbsp unsweetened almond milk
  • 1/4 tsp vanilla extract

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, whisk together almond flour, protein powder, coconut flour, erythritol, and salt.
  • Add melted coconut oil, egg, and almond milk to the bowl and stir until a dough forms.
  • Divide the dough in half and roll each half into a rectangle about 1/4 inch thick.
  • Spread jam over one of the rectangles, leaving a 1/2 inch border around the edges.
  • Place the other rectangle of dough on top of the jam-covered one and press the edges together to seal.
  • Use a sharp knife to cut the dough into 8 equal-sized rectangles.
  • Place the rectangles on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.
  • While the poptarts are baking, make the glaze by whisking together powdered erythritol, almond milk, and vanilla extract.
  • Drizzle the glaze over the warm poptarts and serve.
