Ingredients
- 1 cup almond flour
- 1/2 cup vanilla protein powder
- 1/4 cup coconut flour
- 1/4 cup erythritol
- 1/4 tsp salt
- 1/4 cup coconut oil, melted
- 1 egg
- 1/4 cup unsweetened almond milk
- 1/4 cup sugar-free jam
- 1/4 cup powdered erythritol
- 1 tbsp unsweetened almond milk
- 1/4 tsp vanilla extract
Instructions
- Preheat oven to 350°F.
- In a large bowl, whisk together almond flour, protein powder, coconut flour, erythritol, and salt.
- Add melted coconut oil, egg, and almond milk to the bowl and stir until a dough forms.
- Divide the dough in half and roll each half into a rectangle about 1/4 inch thick.
- Spread jam over one of the rectangles, leaving a 1/2 inch border around the edges.
- Place the other rectangle of dough on top of the jam-covered one and press the edges together to seal.
- Use a sharp knife to cut the dough into 8 equal-sized rectangles.
- Place the rectangles on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.
- While the poptarts are baking, make the glaze by whisking together powdered erythritol, almond milk, and vanilla extract.
- Drizzle the glaze over the warm poptarts and serve.
