  • 1 (5-6 pound) bone-in prime rib roast
  • 1/2 cup unsalted butter, at room temperature
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  • Remove the prime rib roast from the refrigerator and let it sit at room temperature for 1-2 hours before cooking.
  • Preheat the oven to 450°F.
  • In a small bowl, mix together the butter, garlic, rosemary, thyme, salt, and pepper.
  • Rub the butter mixture all over the prime rib roast, making sure to get it into all the nooks and crannies.
  • Place the roast in a roasting pan, bone-side down.
  • Roast for 15 minutes, then reduce the oven temperature to 325°F.
  • Continue roasting until the internal temperature of the roast reaches 120°F for rare, 130°F for medium-rare, or 140°F for medium, about 2-3 hours depending on the size of the roast.
  • Remove the roast from the oven and let it rest for 15-20 minutes before carving.
  • Serve with your favorite sides and enjoy!
