Ingredients
- 1 cup quinoa
- 2 cups water
- 1 sweet potato, diced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 avocado, sliced
- 1/4 cup pumpkin seeds
- 1/4 cup feta cheese
- 1/4 cup balsamic vinaigrette
Instructions
- 1. Rinse quinoa under cold water.
- 2. In a medium saucepan, bring water to a boil and add quinoa. Reduce heat to low, cover, and simmer for 15 minutes.
