Ingredients
- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sour cream
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes thoroughly and pat them dry.
- Using a fork, poke several holes in each potato to allow steam to escape during baking.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
- Remove the potatoes from the oven and let them cool slightly.
- Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato on the skin.
- Place the potato skins on a baking sheet and sprinkle them with salt and pepper.
- Return the potato skins to the oven and bake for an additional 10 minutes, or until they are crispy and golden brown.
- Meanwhile, in a bowl, mix together the shredded cheddar cheese, cooked bacon, sour cream, and green onions.
- Remove the potato skins from the oven and fill each one with the cheese and bacon mixture.
- Return the filled potato skins to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
- Remove the potato skins from the oven and let them cool for a few minutes before serving.
- Garnish with additional green onions, if desired.
- Serve hot and enjoy!
