- 2 lbs pork neck
- 4 potatoes, peeled and diced
- 2 tomatoes, diced
- 2 zucchinis, sliced
- 1 cup beer
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic. Cook until onion is translucent.
- Add pork neck to the pot and brown on all sides.
- Add diced tomatoes, sliced zucchini, and diced potatoes to the pot.
- Pour in the beer and season with salt, black pepper, paprika, cayenne pepper, dried thyme, dried rosemary, dried oregano, and dried basil.
- Stir well to combine all the ingredients.
- Cover the pot and simmer for 1.5 to 2 hours, or until the pork neck is tender and the vegetables are cooked through.
