Modern Pork Goulash

About this recipe

This updated take on traditional Hungarian pork goulash is a comforting stew made with succulent pieces of pork, hearty vegetables, and a rich paprika-infused broth. Perfect for cold evenings, this dish brings together the warmth of aromatic spices and the freshness of bell peppers to create a satisfying meal.

Ingredients

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cups low-sodium beef broth
  • 1 cup canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. 1

Heat olive oil in a large pot over medium-high heat.

  2. 2

Brown pork cubes in batches, then set them aside.

  3. 3

Sauté onions in the same pot until softened, about 5 minutes.

  4. 4

Add garlic, paprika, and caraway seeds; sauté until aromatic.

  5. 5

Return pork to pot; stir in bell peppers, beef broth, tomatoes, tomato paste, and bay leaf.

  6. 6

Season with salt and pepper; bring to a boil then reduce heat.

  7. 7

Simmer covered for 1.5-2 hours, until pork is tender.

  8. 8

Remove bay leaf, garnish with parsley, and serve.

Chef's tip

For a more traditional flavor, replace the olive oil with pork lard and use imported Hungarian paprika.
