Ingredients

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups beef broth
  • 1 cup diced tomatoes
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Instructions

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the pork cubes and cook until browned on all sides. Remove the pork from the pot and set aside.
  • In the same pot, add the chopped onions and cook until softened, about 5 minutes.
  • Add the minced garlic, sweet paprika, and caraway seeds to the pot. Cook for an additional 1-2 minutes, until fragrant.
  • Return the browned pork to the pot and stir to coat it with the onion and spice mixture.
  • Add the diced bell peppers, beef broth, diced tomatoes, tomato paste, and bay leaf to the pot. Season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5-2 hours, or until the pork is tender and the flavors have melded together.
  • Remove the bay leaf from the pot and discard.
  • Serve the pork goulash hot, garnished with chopped fresh parsley. Enjoy!
