- 2 pounds pork shoulder, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons sweet paprika
- 1 teaspoon caraway seeds
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups beef broth
- 1 cup diced tomatoes
- 1 tablespoon tomato paste
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley, for garnish
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the pork cubes and cook until browned on all sides. Remove the pork from the pot and set aside.
- In the same pot, add the chopped onions and cook until softened, about 5 minutes.
- Add the minced garlic, sweet paprika, and caraway seeds to the pot. Cook for an additional 1-2 minutes, until fragrant.
- Return the browned pork to the pot and stir to coat it with the onion and spice mixture.
- Add the diced bell peppers, beef broth, diced tomatoes, tomato paste, and bay leaf to the pot. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5-2 hours, or until the pork is tender and the flavors have melded together.
- Remove the bay leaf from the pot and discard.
- Serve the pork goulash hot, garnished with chopped fresh parsley. Enjoy!
