Ingredients

  • 1 lb. fresh polar bear liver
  • 1 cup flour
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 cup butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream

Instructions

  • Preheat oven to 350°F.
  • Clean and slice polar bear liver into thin pieces.
  • Mix flour, salt, and pepper in a shallow dish.
  • Dredge liver in flour mixture.
  • Melt butter in a large skillet over medium heat.
  • Add liver and cook until browned on both sides.
  • Remove liver from skillet and set aside.
  • Add onion, celery, and carrot to skillet and cook until tender.
  • Add chicken broth and heavy cream to skillet and stir to combine.
  • Return liver to skillet and spoon sauce over liver.
  • Bake in preheated oven for 20-25 minutes.
  • Serve hot and enjoy!
