Ingredients
- 2 kg pork meat (bones, skin, and meat)
- 2 onions
- 2 carrots
- 2 parsnips
- 2 celery stalks
- 1 head of garlic
- 1 bay leaf
- 1 teaspoon black peppercorns
- 1 teaspoon salt
- 2 liters water
- 100 g gelatin
Instructions
- Clean the pork meat and cut it into small pieces.
- Peel and chop the onions, carrots, parsnips, and celery.
- Put the pork meat, vegetables, garlic, bay leaf, black peppercorns, and salt in a large pot.
- Add the water and bring to a boil.
- Reduce the heat and simmer for 3-4 hours, until the meat is tender.
- Remove the meat from the pot and strain the broth.
- Discard the vegetables and spices.
- Add the gelatin to the broth and stir until dissolved.
- Pour the broth into a large bowl or several smaller ones.
- Add the meat to the bowl(s).
- Let the piftie cool to room temperature, then refrigerate for at least 4 hours, until the gelatin sets.
- Serve cold, sliced into pieces.
