Ingredients

  • 2 kg pork meat (bones, skin, and meat)
  • 2 onions, peeled and quartered
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 2 celery stalks, chopped
  • 1 head garlic, peeled and mashed
  • 3 bay leaves
  • 1 tablespoon black peppercorns
  • 1 tablespoon salt
  • 2 liters water
  • 100 g gelatin

Directions

    Clean and cut the pork into manageable pieces.

    In a large pot, combine pork, chopped vegetables, garlic, bay leaves, peppercorns, and salt.

    Add water and bring to a gentle boil, skimming off any foam.

    Strain the broth through a cheesecloth-lined sieve to remove solids.
