Ingredients

  • 2 kg pork meat (bones, skin, and meat)
  • 2 onions
  • 2 carrots
  • 2 parsnips
  • 2 celery stalks
  • 1 head of garlic
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 teaspoon salt
  • 2 liters water
  • 100 g gelatin

Instructions

  • Clean the pork meat and cut it into small pieces.
  • Peel and chop the onions, carrots, parsnips, and celery.
  • Put the pork meat, vegetables, garlic, bay leaf, black peppercorns, and salt in a large pot.
  • Add the water and bring to a boil.
  • Reduce the heat and simmer for 3-4 hours, until the meat is tender.
  • Remove the meat from the pot and strain the broth.
  • Discard the vegetables and spices.
  • Add the gelatin to the broth and stir until dissolved.
  • Pour the broth into a large bowl or several smaller ones.
  • Add the meat to the bowl(s).
  • Let the piftie cool to room temperature, then refrigerate for at least 4 hours, until the gelatin sets.
  • Serve cold, sliced into pieces.
