Ingredients

- 1 onion, halved and charred
- 2-inch piece of ginger, sliced and charred
- 4 star anise
- 2 cinnamon sticks
- 4 cloves
- 1 tablespoon coriander seeds
- 1 tablespoon fennel seeds
- 1 tablespoon sugar
- 1 tablespoon high-quality fish sauce
- 8 cups beef broth
- 8 ounces rice noodles
- 8 ounces beef sirloin, thinly sliced
- Garnishes: bean sprouts, Thai basil, lime wedges, sliced jalapenos, hoisin sauce, sriracha

Pre-boil beef bones, then drain and rinse to remove impurities.
