Ingredients
- 1 pound fresh white fish fillets, cut into bite-sized pieces
- 1 cup freshly squeezed lime juice
- 1 red onion, thinly sliced
- 1 jalapeno pepper, seeded and finely chopped
- 1/2 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 avocado, diced
- 1 sweet potato, boiled and sliced
- Lettuce leaves, for serving
Instructions
- In a large bowl, combine the fish, lime juice, red onion, jalapeno pepper, cilantro, mint leaves, parsley, garlic, salt, black pepper, and cayenne pepper. Mix well to ensure the fish is evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, gently stir in the diced avocado.
- To serve, arrange lettuce leaves on a platter. Place a scoop of the cebiche mixture on each lettuce leaf. Garnish with slices of boiled sweet potato.
