Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons Penang curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • Fresh cilantro, for garnish

Instructions

  • In a bowl, combine the Penang curry paste, soy sauce, fish sauce, brown sugar, lime juice, and minced garlic. Mix well.
  • Add the sliced beef to the marinade and toss to coat. Let it marinate for at least 30 minutes, or overnight for maximum flavor.
  • Heat the vegetable oil in a grill pan or skillet over medium-high heat. Add the marinated beef and cook for 2-3 minutes per side, or until cooked to your desired doneness.
  • Remove the beef from the pan and set aside.
  • In the same pan, add the sliced bell pepper and onion. Cook for 2-3 minutes, or until slightly softened.
  • Return the cooked beef to the pan and toss with the vegetables. Cook for an additional 1-2 minutes to heat through.
  • Serve the Penang curry grilled beef over steamed rice or noodles. Garnish with fresh cilantro.
  • Enjoy!
