About this recipe

Experience the authentic flavors of Nyama Choma, a Kenyan culinary delight where succulent meat is marinated in a harmonious blend of spices and grilled to perfection. Each bite offers a smokey taste that pairs perfectly with a refreshing side of tomato and onion salad.

Ingredients

  • 2 pounds beef or goat meat, cut into large chunks
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Juice of 1 lemon
  • 1 onion, sliced
  • 1 tomato, sliced
  • Fresh cilantro, chopped for garnish

Directions

  1. 1

Mix olive oil, garlic, smoked paprika, cayenne pepper, black pepper, salt, and lemon juice in a bowl.

  2. 2

Add meat chunks to marinade, ensuring even coating. Marinate in refrigerator for at least 2 hours or overnight.

  3. 3

Preheat grill to medium-high. Remove meat from marinade, discard excess marinade.

  4. 4

Grill meat, turning every 10 minutes, for about 50 minutes or until desired doneness.

  5. 5

Slice onion and tomato for a fresh side salad. Season with salt and pepper.

  6. 6

Remove meat from grill, let rest 5 minutes. Slice and serve with salad, garnishing with cilantro.

Chef's tip

This dish is authentically Kenyan, perfect for BBQs and pairs well with a side ‘kachumbari’ salad. For a spicier kick, consider adding fresh chopped chili to the salad.
